The chef's career began in Lima-Peru in 1996 in a kiosk on a beach south of Lima. He emigrated to the United States in 2000, settling in Miami to work in various kitchen areas of restaurants from different cultures, thus enriching his international gastronomic experience and knowledge. The desire to take that knowledge to a more professional level led him to enter the Le cordon Bleu culinary arts school in Miami where he graduated with honors and was later invited to teach master classes there.
In 2011 he opened his first restaurant in North Miami Beach, which in a very short time became the favorite of that city. His restaurant MERKADO31 today has 5 locations.
The signature of each of its creations has made it position itself as one of the best Peruvian restaurants in Miami. The preparation techniques he uses make the simple become extraordinary and have led him to win recognitions such as: Top Peruvian Chef 2016, 2018, 2019, 2021, he also won culinary competitions such as; Best Traditional Ceviche 2014, Best Grilled Chicken 2012, Best International Ceviche 2015, among many others.
The chef's work brings together nearly 3000 years of Peruvian culture represented in his dishes that have been passed down through generations and show great pride in tradition and respect for his ingredients, at the same time presented in a contemporary way and authentic style.
