The passion for gastronomy and careful attention to service distinguish the professional career of Fabricio Pareja, Manuel Verástegui and Evelyn Verastegui, partners and now owners of the Merkado31 restaurant chain. The adventure began when Fabricio and Evelyn, married at the time, began their journey through the world of aromas and flavors by opening a small restaurant on the seashore south of the city of Lima, in their native Peru, in the summer of 1999. Very soon, between stoves and ingredients, both found themselves seduced by work inside a kitchen, venturing to open new premises, but this time in the competitive capital. Three years passed with their creations earning a place among the demanding diners of Lima, when the arrival of their first child prompted them to go for more, leaving everything in Peru to start from scratch in the United States.
